Education Challenge Grant: The Space Food Challenge
The goal of this project was to design and implement effective
college-level educational programs about food systems for
space travel. In 2002-2003, faculty members learned about
the challenges of providing food during space travel and the
parallel problems of providing food to Earth's population.
These issues provided the basis for the incorporation of knowledge
about space into existing curricula in food science, nutrition,
and horticulture. Each participant developed a lesson, evaluated
and edited the lesson with assistance from the group, and
implemented the lesson in classes at Iowa State University.
